Q: what makes this "premium" how is it different from the regular white cheddar powder?

Their other, 'gourmet' cheese powder contains non-dairy creamer and corn syrup solids. Yuk >:-P The listing page for this 'premium' version states only "Cheddar Cheese, Disodium Phosphate <2%" Someone else asked for the ingredient list to be posted; if that's really all that's in here, that could be what they mean by "premium." However, their listing's second bullet point is about non-GMO, no rBST about which I care less, so possibly that's what they mean. Will probably buy if it's just cheese (and anti-caking), but am being cautious 'til someone confirms label. (Hint to Hoosier: a photo of the ingredient label would help.)

Q: What is the life of the product once it's opened? Can it be stored in the freezer for longer life?

I'm not sure what the shelf life is but we had our first container for about 9 months. I never refrigerated it and it was as fresh as the day I bought it when we emptied the container. Hope this helps.
