The primary difference is that the 860 Pro version has sequential read speeds are up to 560 MB/s and sequential write speeds up to 530 MB/s, with newer chips and a different controller. The 860 EVO has sequential read speeds are up to 550 MB/s and sequential write speeds up to 520 MB/s, and probably has the previous generation of chips and controller. Keep in mind that these are max Sequential speeds, random read/writes and average read/writes are going to be slower. The random and average read/write speeds is where you will see the biggest difference in performance. After taking a second look at the specks of both, if you aren't rendering 4k video or something like that I would save money and get the EVO.

You said that this SSD is used on a desktop PC. So you can connect both the original hard drive and the SSD using SATA cables. Or you can mount one with SATA cable and the other one with USB to SATA adapter. It doesn't matter which hard drive is connected with which. As long as your cloning software recognizes both drives. Just make sure that the USB to SATA adapter and the USB port you connect to are both USB 3.0. The speed is much faster with USB 3 ports and adapter. Hope this helps.

Q: Would this be compatible with a macbook pro 15" late 2011 model?

The machine I am using right now is my Mid-2012 MBP 13 inch. I cloned one of these drives into this machine at the beginning of November. This "vintage" ol'girl with 16GB of RAM (that's right sixteen GB) now screams along. I think that I have a couple more years of useful life in it. This is a good price for the Samsung PRO model, it will likely come down in price, like most electronics.
