Excellent information, confusing presentation
The recipes in the book are very good and the information offered is excellent. I am more than a beginner and have several other Caramel books. The necessity to keep flipping back to the master recipe to review the steps when incorporating additional or new ingredients for a different recipe is frustrating and confusing, thus my rating of only 4 stars. I would suggest to a beginner using this book, print out the steps of the master recipe and keep it visible when using one of the advanced recipes. That way,when the new recipe says to substitute an ingredient or check the temperature in a step, the referenced step is right there to view without the need to find it in the book. I had planned to give this book as a gift to an aspiring pastry baker and candymaker, a teen who is experienced in the kitchen, but I will find another alternative and keep this book in my own library.

Good, but limited
Only one "master recipe" for caramel, then just ingredient additions for the remaining flavors. I expected to get more than one basic caramel recipe (maybe one using brown sugar, one using condensed milk, etc.) Clear instructions, but not as varied as I would have liked.

I liked it, clear instructions, excellent tips on safety, did not give it 5 stars because would have love more recipes.

It has a lot of recipes that use caramel, but if you are looking to learn how to make caramel, not the right book

If you want to find out how to make caramel sauce(s) and candies, this is the book for you. The basics are covered in a clear and thorough manner.
