Q: Are these real Shimano manufactured units, or copies of Shimano?

If your interest is "Shimano" only, I would purchase only from Shimano directly. These work as expected. The name on the units says Shimano, I would expect they possibly are made China. My biggest care is do they work, do they last. At this point I'm more than happy with the shifters that replaces twist shifters.

Q: What is the difference in the 4 finger and the regular?

The brake handles are slightly longer then standard so you can use your whole hand. Most people only use a couple fingers though and can use a shorter brake handle which is less likely to snag on brush but less leverage.

Q: I have a mongoose 27.5 excursion will this work?

Yes, they will work. You just have to transfer over the brake lines and the cable housings of the shifting lines.
