Toast ½ cup of Fonio grain in a skillet or non-stick pan on medium heat for 2-3 minutes. Mix salt, 1 teaspoon of oil and herbs(optional) in water or stock and set aside ¼ of the mixture. Slowly add the remaining ¾ of the mixture of the water or stock to the Fonio in the pan whiles stirring until all liquid has been absorbed. Sprinkle the remaining ¼ of the water or stock onto the Fonio in the pan to generate steam. Cover and cook for 1-2 minutes, remove from heat and let it sit aside covered for 5-10 minutes.
