Malitol is often absorbed more slowly than sugar. So the right answer is what is the carb like effect (raising blood sugar - raising insulin levels) in you personally, today. Whats the point of sugar free if your using Maltitol? It has a glycemic index of 35!

From my understanding maltitol is a sugar alcohol and does not affect blood sugar. A sugar alcohol is indicated by an 'ol' at the end of the word. It is not absorbed . Also, a glycemic index # of less than 50 indicates it is low on the index. Hope this helps. Jean

Of course they don't work in a paleo diet! Your hunter gather ancestors never found a sugar-free chocolate chip tree to pick them off of, did they? All chocolate chips are a processed food, and therefore not paleo. Limit yourself to things found in the meat & produce aisles and ignore the rest of the store, if you want to stick to a paleo diet.
