How far apart are the two vesa mounts?

Making sure to level set on what we are talking about here; The bracket is a VESA 100mm mount, which means the VESA holes are on 100mm centers: The mount must allow a side clearance of 10mm from the center of the holes on all sides of each hole: The Bracket footprint is actually 120mm across (with 10mm Radiused edges). The NUC bracket is the same 100mm pattern with the same clearance (120mm). Distance between the two 120mm mounts is 20mm (~25/32"). The kit comes with standoffs needed to clear the Z-axis of contoured monitors which are VESA-compliant.

I need to mount 2 nucs to the back of my monitor. can i use 2 plates (one to the left, 2nd to the right) so that i can mount both at the same time?

That should work as long as you have screws long enough to go through the monitor mounting plate (on the monitor stand/mounting arm), both of these brackets, and the monitor itself.

We need longer screws to use this with our current lcd mounting hardware. the screws that come with it are 1" long. i need 1.25" screws?

Usually you do not want to use very long screws on monitors or flat screen TVs. You can damage internal components. In fact often we have to use spacers to make sure you do not go deeper. You can use a lock washer to be sure you have a good connection. I often use industrial velco to attach the small computers and rarely use a mount at all.
