Q: how to adjust the auto off time?

To change the time out, power off the scale, then hold down the M button and click the power button five times. It will give you options for 60 seconds, 120 seconds, 180 seconds, or 0 to disable time out. Click the M button to cycle through the options, then hit the power button to set the option.

Q: Will this scale actually weigh down to 0.01gram? Or does it start at a higher weight and then weigh in 0.01 increments?

It measures in .01g increments. But it says directly in the description and details it's not accurate below .05g. Anything below .05g would only be a few grains of something. I have several calibrating weights I've tried including 1g. For all it reads exactly as expected including a measurement of 1.00g when using the 1g calibration weight.

The TOTAL capacity of the scale is 500 grams. If you put an empty container on the scale, and that container weighs 400 grams and then hit tare, you'll only be able to measure out up to 100 grams before you hit overload. If you put a 450 gram empty container on it, and hit tare, you'll only be able to measure out 50 grams before hitting overload. Etc. You get the idea. :) So remember... the TOTAL capacity of the scale is 550 grams. That's the total of whatever container you're measuring into plus the weight of the item to be weighed. Hitting tare doesn't increase the scales capacity.
