Is that oil first cold pressed or not?

Yes, this extra virgin olive oil (EVOO) is "cold-pressed" at low temperatures with modern milling technics to minimize oxidation and preserve both aromas and health properties related to polyphenols and healthy fats. In reality, modern mills "cold extract" the olive oil instead of "cold pressing" it, but the terminology "cold pressed" is still being used to indicate an olive oil produced without added heat. This EVOO is indeed quite high in polyphenols, with polyphenols level just above 600mg/kg (2020 Harvest) and it has a nice mix of fruitiness, pungency, and bitterness. Pungency and bitterness are balanced with a slight prevalence of pungency over bitterness. It pairs well with most food and it can be used for any cooking, given its high smoke point > 470F.
