Q: Is there much flex? our sectional is 84.5" so i'm worried it'll be hard to get the 85" cover to easily fit over. should i get the 100" size?

If your sectional is 84.5 then the 85" cover should be fine. We didn't have any issues with it covering our large sectional. It didn't last more than one season without starting to rip, we were able to fix and reinforce it though. I don't think it lasted as long as we had hoped it would

Q: My v shaped set measures 90 x 90 x 32. Will the 100 x 100 x 33 cover fit my set ok without too much extra fabric flapping about?

That's the same size as my set. There's some space on the ends, but nothing noticeable, in my opinion or a lot of "extra fabric flapping about." It feel perfectly sized to me.
