Could the AirTag holder/strap/pocket be purchased separately and fit the carbon fiber model version of this?

It does not come with airtag. You have to get that on your own through Apple

Is the AirTag holder/strap/pocket removable and can it be reinstalled on other Ekster wallets?

The Back Plate of the Cardholder for Airtag is specially designed for this particularly Cash Band. You could try it with another cardholder, but it wouldn't work as well.
