Q: how tall of a ham or turkey can fit in this pan

The base is 5" in height, so probably 7" covered height to have a tight fit with the lid on.

Q: I make drippings gravy right from my current roasting pan (which is heavy), can I put this pan directly on my stovetop burner?

I have and will continue to do so. I'm a pretty avid home chef. Realize that the stainless is a bit thinner than super high quality ones but it works perfectly well for many different purposes for me including de-glazing drippings etc. It's also light which I like (and has a vented lid) - I'm sure if you over-temp it it could be damaged but I'm really impressed with this roaster - the negative comments about it are ridiculous in my opinion.
