Q: Will this hold and display the highest weight?

The scale will hold any weight in 2 ways 1) the weight is still on the hook 2) you press "hold" key and it freezes. It has no function to stop at the peak point and freeze automatically.

Q: can you use this scale to pull horizontally to tell how much force it takes to pull something? Or do you have to hang the weight from it?

Yes, you can. But please note, the scale does not register peak weight/force automatically (only by clicking the hold key).

Q: Can i pull the deer up with a pully with this attached to the gambrel? and it still give an accurate reading? last scale i had wouldn't

Yes, the hanging scale will do this job. Most of the customers did the same and the scale showed accurate readings.
