Is this product mould resistant? Thanks

Manufacturers of XPS foam boards all say they are mould resistant, so we can take it on good faith that it does resist fungal growth. Keep in mind, however, that you should kill the mould using a good quality fungicide, then wipe clean with a cloth soaked in bleach to remove dead spores and other stain inducing agents. When the area has dried, use a quality stain blocking paint with anti-fungucidal properties. This might seem an overkill, but it is the only proven method to prevent mould from reappearing.

could i use this product in a bathroom to lay lvt boards on

You could if your bathroom floor is not already level. I use it for laminate. It's ok in that it's waterproof. Lvt flooring doesnt always require underlay but personally i would, just to cover any minor bumps etc

is this ok for laying over floorboards

If you mean to lay on top of floorboards and then put flooring over, yes it's suitable. They need to be layed down and cut to size to fit the room, then taped together with a suitable tape to make sure they won't move over time.
