Let's break down the characteristics of this product:To start with, this is an Iberico cheese, which means that it is mixed-milk (cow, sheep, goat) but contains a significantly higher portion of sheep and goats milks than regular mixed-milk cheeses, giving it a stronger, more rustic flavour.To this, add the fact that the cheese is produced from raw (unpasteurised) milk. Not only does this intensify the superb flavour, but raw milk cheeses are highly sought after by those who prefer dairy products with minimal processing. The lack of pasteurisation means that the natural fats and nutritional content of the milk remains intact - often considered to be a big advantage over pasteurised products. In general, unpasteurised dairy products are harder to commercialise, having shorter shelf life, so are much harder to find in the UK.The cheese is classed as Viejo (old), which means it is matured for a minimum of 180 days for maximum flavour, comparable to that of the very best Manchegos.This Conde Duque is an extremely highly appreciated cheese, both inside Spain and abroad. The cheese won gold in 2008 and 2010 in national and international cheese competitions respectively and in 2010 was crowned as best cheese of Castilla-Leon. Very good
Very tasty, notwithstanding the handling and travelling. A rich, ewes' milk cheese with a characteristic crunch and density about it. Rather expensive though.
