Fake product, curcumin power

I thought Astaxanthin wouldn't dissolve in water because it's fat soluble. But I put the capsule in water for a while and it completely dissolved.Can seller care to explain how is fat soluble substance dissolving so well in water ? I don't mind paying more, just give me quality products.
