INCORRECT; Illy Caffe uses Natural Liquid Carbon Dioxide Decaffeination Process. Natural carbon dioxide is used in a subcritical condition (a liquid state) under low temperature and pressure. This process has excellent caffeine selectivity. This selectivity guarantees retention of the aroma and taste of the coffee. The green, unroasted coffee is immersed in warm water to open up the pores. The green coffee is then put into a pressurized tank with liquid carbon dioxide. The Co2 circulates through the coffee, drawing out the caffeine. The coffee is then put in an evaporator where the caffeine is separated from the Co2. After evaporation, the Co2 is re-condensed and the process repeated until the desired amount of caffeine is removed. The coffee is then discharged into a drier where it is dried to achieve its original moisture content. The coffee is now ready for roasting. Characteristics of Natural Liquid Carbon Dioxide Coffee Decaffeination Process are: The compounds responsible for the flavor and the taste in the roasted coffee and the cell structure are left intact. The coffee is 99.9% caffeine-free and only contacts safe natural substances; pure water and chemically inert carbon dioxide. The process is all-natural and is certified organic and kosher by the appropriate organizations and authorities. Honestly I don’t know, but I can say as strict decaf drinker of tea and coffee, this is really good I have half dozen tins in my cupboard and also the lavazza decaf is excellent especially for espresso set your machine to extra strong it’s fab! Enjoy! Cheers paul
