It also has a high mineral content. 100 gr. of Culaccia ® contain 1/4 to 1/6 of the entire daily requirement of phosphorous, potassium, iron and zinc. Muscle fat content is just 3-4 gr. per 100 gr. of product, making it comparable to that of lean beef and chicken. The cholesterol level is only 70 mg. per 100 gr. thanks to the strict breeding criteria utilized. Culaccia ® fat is primarily unsaturated and fully in line with current nutritional guidelines. Its main components are oleic acid (the same as in olive oil) and linoleic steric acid, both important in the prevention of heart disease.
