Ridged pappardelle
A nice pappardelle with ridges (hence 'rigate') along the length to assist in coating with sauce. They're not as broad as pappardelle often are, only 1cm wide, and the pieces are around 26-27 cm long. The ends tend to be a bit uneven with fragments broken off, not that it really matters very much. Cooking time 9 minutes. Works well with a ragù sauce.
