I did not make this chorizo, but I was the delighted recipient of one of its products. The kit was a gift to friends of ours, who were thrilled with it, and although first-timers at sausage making, experienced no calamities. They chose to dry the sausage for long-term storage, and discovered that it shrank by a very substantial amount and became quite hard on drying - more than they had been expected from buying saucissons secs from butchers and delis down the years. However, being resourceful cooks, they found that soaking the reusltant chorizo for a few hours prior to use made it softer and more tractable, and that is was, regardless of shrinkage, delicious.I concur with the above.The kit works, the sausages are reliable, and the flavour is excellent. Well worth playing with, especially if you're new to sausage making.
