At Buchanans Cheesemonger we source and mature the most amazing artisan cheese from across the UK and Europe in our central London cellars. Our team lavish the cheese with care and attention, resulting in some of the most beautifully conditioned dairy in town.We know that a vital part of the cheese making process is the maturing and ripening of the cheese, where time, devotion and a lot of patience help our cheeses develop the most delicious flavour and texture. Our cheese is matured to perfection in our in-house cheese cellars, where each room runs at a specific temperature and humidity level allowing for the individual needs of the cheese.Golden Cross is made by Kevin and Alison Blunt at Golden Cross Cheese near Lewes in west Sussex. The milk for Golden Cross comes from British Sanaan, Toggenburg and British Alpine goats that graze outside on pasture in the summer months and are kept in a barn for the winter, they are fed on hay all year round.Golden Cross is a lightly ashed log with a fresh and smoothly citric flavour when young. It develops a richer more complex flavour with an oozing texture as it matures. Great on a cheeseboard but also excellent grilled or as an addition to salads - delicious and versatile. Store in the fridge and take out an hour before serving at room temperature for best flavor.
