Does this model come with the metal wire pull out shelves (not the circular wire racks) as in previous versions, or does it come with the solid baking

The new model comes with solid baking style slide in trays. I retained the wire pull out shelves from my former 10 year old model. I find the new baking style trays usefull outside of the microwave, for placing hot dishes etc.

How damp does this get inside during cooking? current one is dripping wet when doing rice etc... does this one vent sufficiently to stop this?

Well rice holds a lot of water. cook it, and the steam from this is then condensated, which happens when the rice is cooking. You will have to put a lit on or wrap the cooking bowl with cling foil(not foil) with holes in the top to let some steam out.

How long does the convection oven take to preheat? Let's say at max 250c temperature, approximately how long from cold? Thanks

It's a while since I used preheat but it's not very long and beeps when desired temperature is reached, it all works very well and much quicker than a conventional oven. I'v checked the instruction book but it doesn't give specific times because all temps are different but if I remember correctly it's only a matter of minutes. I'm really pleased with this appliance and the way it operates, sorry I can't be exact with the timing but hope my comments help a little.

Does anyone know when used as a convection oven if the grill comes on during cooking to provide/maintain heat at higher temperatures?

No, on convection it only comes on during the preheat sequence. Once selected temperature has been reached the grill does not operate again when it is being used as a convection. If you use the preset cook programs then the oven automatically switches between convection, grill, combi and microwave dependent on the program selected; so it can appear to give bursts - but this only happens on the preset programs. You can also program the grill to come on after a combi, microwave or convection cycle to brown off items. Eg. Select convection then input time, select grill then input time ... The microwave will remember both requests and follow them sequentially (up to 3 sequences plus a preheat is remembered). You should not really be putting food in for cooking whilst preheating. Oven should be empty until oven beeps. Then food is put in and start pushed. I have two of these microwaves built in and use them as my main cookng appliances. They are fantastic!
