Mercer Culinary Renaissance 11-Inch Revited Slicer Knife-Granton Edge, Stainless Steel, 38x10x3 cm, Black

I have bought quite a few very sharp knives for cutting joints of meat which are good but heavy to use. Saw this type of knife used by a chef on a youtube video and it looked ideal. Opted for the 11 inch rather than the 14 inch which for me not carving half a pig is ideal. The knife is well balanced and cuts so thinly, even my Husband uses it and he is very fussy. Carving a small 2kgs honey glazed ham joint it cut thin slices when cold like a hot blade in butter. How this will be in 12 months we shall see but for now very pleased. My only moan is that it should be sold with a cover being as sharp as it is. Would have happily paid extra for this.

As a past publican and grill/kitchen hand I've used and had many knifes. as a purely meat carver this is one of the better knifes I've used. Well balanced and a sturdy blade that carves nice slices. Very pleased

I bought this for my husband as he cooks a Sunday roast each week & wanted a really good sharp knife to carve the meat. He is beyond thrilled with it! He said it’s like cutting through butter! Have now ordered a second one for my sister as she said she’s rubbish at cutting meat!

Works very well, but I find I have to work at it to keep a good edge on it. That said it's not that hard to run it through the sharpener before I use it each time.

Great slicing knife, is very well made, and maintains its sharp cutting edge very well. I have previously purchased the 14 inch knife for slicing larger cuts such as a whole brisket and has also performed very well. Another excellent Mercer product, do not hesitate to pick up one or more of their knives.
