DO NOT WASTE YOUR MONEY ON THIS BOOK! The worst cookbook ever!
Seriously! I am so disappointed in what this brought to my table. I am a home chef of 40 years on the subject of healthy and vegan food and have an enormous collection of cookbooks. That being said...I am horrified of books like these, and am forced to write this review, because it is that bad! and I see a lot of garbage these days. The author must have loosely compiled it to make a buck with no thought whatsoever!1) No creativity in the titles as each and every one but maybe 6 list ahead of the title..Delicious Instant! Vegan Instant! and on and on. No kidding! since it is the title of the book, you think we don't know that.2)The course titles, some forgotten in the index, don't have space or bold caps so you can reference. horrid layout, no spacing, empty space etc.3)The Fat grams are not correct and are over the top when you consider 1 Tbl = 15 G some are bitterly in the hundreds when you add all the fattycoconut milk used. And it is as if he made up the nutritional value chart at the bottom4) The fact that he is suggesting Stevia and has no knowledge about it since 1 tsp + 1 cup of sugar and in some of the recipes he is suggesting a half a cup of Stevia!!!5) Some recommended ingredients don't even exist like dried plums, white wine sugar! etc6)He list dinner entrees in the breakfast section7) Or ridiculous ingredient suggestions like...4 DROPS of Lemmon! seriously!8) Page 28 lists multiple varieties of grains and beans but he leaves out the WATER in which they should cook in!9) Most frustrating is the fact that the ingredient portion of each recipe is totally not in sign in the cooking process required in the below description. That is horrible because your mind hast to search hard of the ingredient that are now listed above like a scrabble game and takes forever to now group them as they should be to make a recipe easy to make. And if he doesn't know this is essential as a cook then I question if he even tried any of these recipes!!!This is a throw together book of which he should be ashamed of! And any 5 star ratings had to come from his friends and family!DO NOT WASTE YOUR MONEY ON THIS BOOK

Don't waste your money
Most recipes use a separate saute pan... did this author mis the saute feature? Boring recipes with only a few worth using and mostly breakfast/porridge

No photos or illustrations or explanations; hippy recipes
While I am not vegan, I often eat vegan food and am largely vegetarian, and I bought this book based on positive reviews as my first Instant Pot recipe book after buying the Instant Pot. There are no photos in the book, and I would describe the recipes as largely being hippy food (as opposed, for example, to Americas Test Kitchen book, Vegan for Everybody: Foolproof Plant-Based Recipes for Breakfast, Lunch, Dinner, and In-Between). There is also nothing about how to use the Instant Pot--it is pure and simple a list of receipes with a half-page introduction inviting you to be vegan. While there may be tasty dishes in this book, I have not ended up cooking any of them, but have turned towards the Internet and other cookbooks as sources more to my taste or more reliable.

Terrible cookbook. Based on the most essential aspect of any cookbook: precise description of ingredients, amounts, time to cook under what process, and procedure. Fails all these criteria. The cook using this book is totally winging it in terms of ingredients, e.g. dried beans, canned beans, rinsed or unrinsed, pressure cook or some other method? quick or natural release? None are specified. It's a sham of a cookbook.

Not for whole foods, plant-based
Loses a lot when there are no pictures, plus I was expecting a real vegan cookbook. This one still uses a lot of oil and salt. It is hard to find cookbooks that support a whole foods, plant-based way of eating.

Some recipes are good
Some of these recipes did not turn out well and I followed the instructions to a T. Also, a reminder that Instant Pot recipes are always soft, you'll never get anything crispy out of an IP, some of these recipes would be much better if crispy.

Two Stars
The recipes didn't appeal to me when I looked through it. Maybe personal taste.
