I liked their Foglie Di Oliva pasta so I gave this a try.
I found this squid ink pasta at a discount gourmet market and for the price I got some. I did an alfredo sauce with shrimp, mushrooms, and green onions and really liked this. The pasta seems to have it's own flavor and I believe the squid ink is kind of like fish sauce that brings a rich and saltiness to the plate.The texture seemed to hold up even after being added to the sauce and simmered for a time. I think I would do a simpler dish like with oil and different seafoods instead of a white sauce next time.
