I started working at a Chinese restaurant where they have half a dozen cleavers that could probably split a human hair. I wanted to experience the thrill of accidentally slicing my hand open in the comfort of my own kitchen so I went looking for something similar. The biggest difference is the weight. The knives at work are very light for their size and this thing feels like a hatchet. Not a bad thing as I’m sure it helps with things like crushing bones. I was able to cut see through tomato and grape slices. It smoothly slides through printer paper. It comes in a great padded storage box with a magnetic flap to keep it closed. In fact I came back on here and bought a pair of level 9 stainless steel threaded anti cut gloves, which cost more than this knife.
