Q: once pail is opened whats tge shelf life?

Each pouch is packaged in Mylar pouches with oxygen obsorbers, best by date would be what is printed on pouch. Once each pouch is opened shelf life is one year.

Q: which is this 1 pound a label says,5 ounds as description says for shipping wieght or is it the 10 pounds of product as the title says?

I bought this bucket and it is NOT 10 lbs. It weighs about 5 lbs which includes the bucket weight and the food is 1 lb 10 ounces. Wal-mart has the same inaccurate description in their website as well.

Q: What are the instructions for rehydration?

Boil water just like you were cooking raw vegis except they don't have to be cooked that long. Taste to test for texture and softness. Also if using within in a recipe I would re-hydrate first even though you probably don't have to. It just makes more sense to re-hydrate to be on the safe side for any use.
