Q: Is 2 layers enough for softwood ?

Depends.. for utilitarian furniture maybe two coats are ok but for something more valuable I'd suggest going for at least four

Q: Can this be used on Terracotta Clay and what results it may give?

I don't think it's meant for clay

Q: How long after applying to we wipe off the excess ?

In shade, about 30 mins for the first coat

Q: If applied on a wooden (veneer) bathroom door, does it offer some waterproofing.

If you are not looking for a natural product for that purpose, I suggest you go for PU. Tung Oil would suit raw wood better and you are going to have to re-applying it every few months from what my research so far suggests. Hope this helps!
