- 2017 AOC de Provence is a harmonious blend of our Bouteillan olive oil and our Aglandau Olive Oil. It is a complex and rich olive oil yet light without a bitter aftertaste. We are fortunate in Provence France to have olive tree varietals that naturally produce beautiful, full, rich, and yet mild olive oils. Mas Des Bories has 4 varietals of olive trees, Aglandau, Bouteillan, Grossane, and Salonenque which is named after our city, Salon de Provence. Just like each varietal of grapes produces wines with a different flavor, each varietals of olive tree produces different tasting extra virgin olive oil. A lot of olive tree produce bitter and or bad tasting olive oil. A crab apple tree is still an apple tree, but its fruit isn't edible.
