The smoother the roller, the better. If you use a rough one it leaves bubbles

No, it is water based and has an odor but is maybe similar to the smell of Weak vinegar Maybe.

I have outside cement counter tops in a freeze area. Will this sealer hold up through winter?

We just applied it this summer, have not been through a winter yet

If diluted 50:50 with water type finish is satin.
