Great Sharp knife that holds an edge.
This is the second Dalstrong knife that I have gotten. It’s really sharp, holds an edge for a long time, and looks really good. If you want a quality knife that isn’t going break the bank like some then this is the knife brand to get.

Last set of knives I will ever have to own!!!
I ended up completely replacing my German made Henckel knives, I had been using for over 30 years. I was tired of having to hit them with steel every time I used them plus the monthly sharpening. I have been extremely happy with these Dalstrong knives so far, after two months of daily use, I have yet to have to sharpen them, and they are still sharp enough to shave with. I did purchase an extra Paring knife, just to practice sharpening. I would recommend that anyone interested in these make certain to view youtube on how to properly sharpen Japanese knives, sharpening is a time consuming proposition that turns into a labor of love. They are a handsome set of knives that really catch the eye and draw your attention to them. The handles fit my hands perfectly and the balance is great. They are a solid well built piece of hardware, that I am sure will last the rest of my lifetime, as well as the next generations to inherit them. I would agree that the some of the extra items shipped with these knives is overkill and the lapel pins are just cheap junk that found the trash. The plastic sheath is very nice and as sharp as these knives are is almost a necessity for personal safety.

Best Bang for Your Buck!
I have about 10 knives in my standard every day use rotation. For the money I think the Dalstrong is probably my top pick although I also LOVE just about anything by Yaxell (I highly recommend their ENSO HD series, they are a top performer, well priced and you'll probably be the only one you know that has them). Tojiro DP line is also a top bang for your buck pick and is a little sharper out of the box, but Dalstrong is MUCH better built and better looking. These Dalstrong Shogun knives handle an unbelievable amount of abuse and hold up.Dalstrong are very good looking knives. They seems to be a little heavier than my other knives, but being a larger fella I love the extra heft and I feel like I have better control. Dalstrong's handles are my favorite of all my knives. I end up using this knife more than others just because I love the feel of the handle. Edge retention is also very impressive on these.Forget about price, marketing, name, etc... which ever knife looks and feels the best TO YOU will probably be your favorite and most used knife. Dalstrong hits it out of the park in looks and feel FOR ME. You'll have to decide for yourself what you like.I rarely give a 5 star and what pushed Dalstrong into the 5 star is their customer service. TOP NOTCH! I seriously can't say enough good things about their customer service.

Working Art
This instrument is beautiful. The balance is superb. The Damascus is visually stunning. It is so sharp out-of-the-box that it will cut you if you look too hard at it.(No; I am not paid or anything…).I can say that I wanted a, slightly on the large side of the scale, good boning knife for working primal cuts, or larger marine fish, etc..This knife is a ‘Dream’ to use. It has a great edge, and with a couple passes on the strop, comes right back.Fillet, or boning a chicken are almost a pleasure. I am looking for an excuse to reach for this blade. It is so nice to have on this scale. Did I mention how good the balance is on this?

Great product! Hands-down, a fantastic alternative to the more expensive Japanese versions. I’m very impressed.

More than a fillet knife
If you're looking for a stiffer than average fillet knife, this is perfect, buy it, you wont regret it. I have found that it's also completely awesome as a relatively large paring knife in the kitchen, and once I used it there, I realized that's where it needed stored. It's now one of my most used kitchen knives. For light tasks such as fine chopping and mincing, thinly slicing, piercing, deboning, etc., this knife is superb. The knife looks beautiful on the magnetic block but more importantly, it's extremely well balanced, stays very sharp reasonably long, cuts through about anything effortlessly, releases foods well due to the Damascus texturing, and is very easy to keep razor sharp with a steel and ceramic rod due to it's fine grind and thin blade geometry. It's a nice fillet knife, but if that's all you use it for, take it to the kitchen, you're gonna love it even more.

A good boning knife is essential to me
I usually hesitate to write a product review until I've had a chance to test its durability. However, in light of the fact that so many have already touted this knife's durability, I will review it.I'm a former restaurant chef who still likes to cook for my family and occasional guests. A good boning knife is essential to me. I'm never satisfied with how butchers here in New England operate, so I constantly find myself trimming steaks, chops, chicken or whatever I buy, just to make it edible. Right out of the box this knife was amazing. Because of the combination of great ergonomic design and an incredibly sharp blade, the first job I gave it Was done in about half of my usual time.I love the look of it as well. It's a beautiful knife with a great looking Damascus pattern in the blade. The packaging is fantastic and I love the saya which protects it. I will be replacing all of my old knives with Dalstrong Shogun.
