The rubber non-slip coating makes it unsuitable for putting food directly on the tray. You would want to put the fruit and veggies in bowls or on plates first, then arrange them on the tray.

It is as deep as a drink tray that a waitress carries, maybe a little over a half an inch deep.

What is the underside made with? Is it a nonskid material?

The bottom is a smooth plastic type of material. There is NO skid resistant surface on the BOTTOM. The inside of the tray IS nonskid. This tray is like those used by wait staff in almost all restaurants.
