A good book with a lot of information.Parts of my work is related to tasting and sensory analysis, a subject i always found elusive.This book answered to questions, make sense with my experience, removed some outdated info and opened perspective ( the part on flavor and big data looked promising).The style is clear and easy to read ,the content is based on scientific studies or interviews of specialists on the field.There is a lot of reference at the end of the book if you need to deepen some point.

A must for those who appreciate great food and drink.
A knowledgeable and informative foray into the synergistic senses that contribute to the overall stage of gastronomy: Flavor. Easily digestible with lots of science and layman's terminology, this book is a must for anyone with a passion for food and drink. If you're looking to expand your understanding of what's happening as you experience gastronomy, this is a great place to start. A great read that I refer to often.

"Flavor" is a great book for those interested in why we perceive foods as we do, or for someone like me who has flavor chemistry experience but has been out of the field for a bit. Easy to understand, but also goes into a lot of the chemical and scientific reasons for readers interested in those details. Highly recommend.

There’s a lot to learn from this book
I enjoyed learning about flavors as well as how our food has been changed over time, by our cultural tastes and the scientists this book talks about.

Just plain awesome!
Learned a lot from reading this book. Not to mention the writer's unique style in describing people. The fine difference between taste and flavor is very interesting.

Absolutely fantastic. Working in medicine, I geek out over anatomical tomes. This is an outstanding, easy to understand look into one of our most important senses. You will never look at cilantro, jelly beans or MSG the same way again

Really enjoyed this intriguing insight and used it as my key research tool for fiction. So well written, with a friendly tone and perfect attention to detail. Recommend this and bought it for several friends as gifts.
