The wood on this block was obtained in the forest of Nicaragua. The wood comes from a tree that was pushed over by Hurricane Felix (a category 5 storm in 2007). This wood is certified "redeemed" wood. By harvesting this tree the remaining forest has been permitted to regenerate more quickly than had this tree remained. This block is an end-grain block. This is preferred by professional chefs because end-grain boards maintain a knifes sharpness. Each section is glued using an FDA approved, food-safe glue, and then pressed. No chemicals were used in making this block. The wood is kiln dried to a 6% moisture content to minimize movement of the block in varying environments.
