Perfect solution to those floating bags
I've used clips, sous vide racks, straps and other means to try and weigh down the sous vide bags as they are being cooked. There is never a guarantee you are going to get rid off all the air when sealing your food, so the float is inevitable for some cooks. Using the magnets has been a simple solution and has worked well for me through a number of cooks so far. The magnets are even strong enough to where I can secure the bag against the side of the container above the water and slowly move the bag down via the outer magnet to submerge the food. These will definitely be a staple in the home for all current and future sous vide cooking experiences. I'm using the Rubbermaid 12 quart storage container for my cooks.

Stronger than I expected. Silicone discolors with usage.
Love these magnets. Retired the giant binder clips that I was using (and probably scratching the vessels I was using them on). Didn't think they needed to be so strong until I did a couple of cooks using some restaurant sized stockpots that weren't magnetic. No problem - one magnet on each side and they handled it without fuss. The silicone covers are no longer red - more like a chalky red color after several long cooks. Took a star off for that. Doesn't affect performance and the covers are still intact - but be aware of that.

Really work well
I am using a large aluminum soup/stew pot for my sous vide stick. These magnets are very strong and have no problem sticking to each other even through the aluminum side of my pot. The red silicone coating will keep them from marring pots (even non-stick), keeps the magnets from rusting, and makes them easy to find. I just stick them on the refrigerator door when not using them.So simple, but such a big help!

Does the job - holds bag in place in a Sous Vide bath
These magnets are very strong (almost difficult to pull apart) and do a great job at holding together a sous vide bag to the side of a plastic water bath container. My only recommendations are that they are a little pricey, and that there is no easy way to store them (like a storage container or something) other than leaving them magneted onto the side of your container. But I am happy with the purchase and their function.

Works great in my Sous Vide oven
I own a Sous Vide Supreme oven and even though it comes with a rack I don't often use it. Instead I weigh down my bags with these magnets. I attach two together on the outside of the bag on each corner. This sinks the bag containing my food right to the bottom on the water tank. They do discolor a little, giving them a whitish haze. This doesn't bother me at all. They work just great for my needs.

Great strength
These magnets work great. They can be a little hard to separate but then again, that's what makes them great. I've used them with both magnetic and non-magnetic pots and they work well with both types. I've started vacuum packing more things so the need of magnets/weights has gone down but for the spur of the moment... okay cooking for an hour isn't really spur of the moment, but when I throw things in a zip top bag things stay where I put them.

A necessary sous vide accessory
These have made my sous vide cooking much more effective. Even with vacuum sealing, air often caused most foods to float to the top while cooking. After using everything from pie weights to a coffe cup to sink the food, I tried these and was amazed at how effective they were at holding the food underwater for the entire duration of even long cooks. They are strong enough that they can work with bulky foods like roasts.

Good solution to keep stuff submerged
These work well for keeping bags submerged in the Sous Vide.I thought about giving them 3 stars though, simply because they are a bit pricey for what they are and also because I realize now there maybe cheaper and simpler solutions (such as putting a dinner plate or two on top of the bags to keep them submerged(
