Top Quality Knives for a Fraction of the Price
UPDATE 10/15/2018:I've been using these SEDGE knives for a little over a year and, honestly, I'm extremely pleased with how they are performing. They're still razor sharp and are holding up very nicely. No complaints whatsoever. Depending on the week, I use them either daily or semi-daily on either a plastic or wood cutting board. The Steak Knife is ridiculously sharp still and absolutely just blasts through food. Now all I need is a larger knife block to hold all beautiful knives I've acquired and I'll be golden!Original Review (initially left 8/29/2017):I have mixed feelings about these knives (explained later) but they seem to be quite nice so I'm going with a five star review, for now. I'll update things later if anything changes.It's a good thing Rhineland Cutlery didn't patent their designs because SEDGE seems to have 'borrowed' them, maybe... just a little... *wink wink*. I've been using Rhineland Cutlery knives for about two years in food prep for the food that goes on my Green Eggs and they have been truly exceptional knives - comfortable to wield, extremely sharp and hold their edges very well. The only problem is that they come with a premium price tag (a single steak knife is $100). I own an 8" Asian Cleaver, 3.5" paring knife and a 6" boning knife - they all work amazing.A few days ago, my wife and I realized we need some more knives as our 13mo old daughter is really enjoying fresh cut fruits and veggies and we're finding our Cutco daily knives dirty in the dish washer more and more when we need them. I was shocked when I saw what looked exactly like my Rhineland Cutlery knives for, in most cases, less than 1/4 of the price so I ordered a 3.5" paring knife, 4.5" steak knife and the 6" Santoku knife to see how they stack up.All in all, it would be difficult for someone to tell the difference between a SEDGE and RC knife. SEDGE's handles are well made, very comfortable to hold and I was very pleased with the fit and finish - everything goes together as it should. I've posted several pictures of the two paring knives, side by side, and the only real visible differences I can tell include: 1) The butt cap on the real RC is a slightly more pointed than the SEDGE - something very minor to me. 2) Blade Finish. The SEDGE blades have a little more of a shiny finish whereas the RC blades are more matte. 3) RC also uses wooden handles whereas SEDGE uses G10. You can't tell a difference in the pictures, but if you inspect it very close up, you'll notice a very faint squared pattern to the handle from the production process but in most light, from anything further than 4", you wouldn't ever be able to tell.I think the G10 may actually hold up better in the long term, but we'll see. I sharpened the knives and the steel seems extremely good and sharpened very nicely. I'll update my review as time goes on. Overall, I'm very pleased but a little disappointed that I've been spending 4x as much for so long :-( Yeah, I'm cheap.

Beautiful, Ergonomically Perfect and Sharp!
