Awesome pasta substitute
Awesome pasta substitute.My husband and I have been trying for years for find a tasty pasta and rice substitute. Well this it. I rinse the “pasta” well with cold water. I sauté with what ever broth or sauce I will be using for the dish. It is t pasta but it is delicious. My husband even likes it better than regular pasta because this “pasta” has some structure to it.

I'd say 3.5 overall. Needs some prep, but a surprisingly workable pasta substitute.
First, the Bad: the mashed palmini. The sour smell and flavor (they use citric acid as a preservative) isn't something you can wash away. They're not given to fluffiness like that picture they show with the meatballs. They are much more on the goopy side. Since we can't rinse the sourness away, expect to season the heck out of them to try to hide it. If you're looking to sub out potatoes for something low-carb, you may want to stick to cauliflower.Also, they are expensive for what you're getting. Not horribly so, but it's a lot when you consider that most of the original carby starchy foods we've traded away were so affordable in comparison. It's never fun when subs for what were affordable staples relegate common meals to 'treats', especially when it's not ever gonna be a true dupe in terms of experience.Next, the Fair Warning: You may experience some loss when draining the riced stuff depending on your strainer. You may want to use a mesh strainer versus the usual plastic pasta one. You're also not gonna get the consistency of rice in terms of size, which may bother some folks, but they do get fairly close.Also, while the sour citric-acid smell and taste are awful in and of itself, it is largely mitigated by a good solid rinse (which to be fair are in its instructions), and the noodles and riced palmini does actually do well with absorbing seasonings and other flavors. You have to do a LOT of rinsing, I found, but if you do this, you will get them to a point where there's almost no trace of it. The more you rinse the better the outcome. This coming from someone who is quite sensitive to taste. Sauces are good with them, just make sure you've done your due diligence with drying off after rinsing. It's a bit of work but it's rewarding.The Good: As far as low-carb noodle substitutes go, these are among the best I've had. The citric acid does wash away. They do absorb flavors well. Sauces play nice with them. The 'bite' is adjustable with a little extra cook time, if you wish. As with all keto-friendly and low-carb substitutes, they're never gonna fully emulate the real thing. Go into it with tempered expectations and you'll come out with an overall positive experience.Recommendations for the company: If the mash was something that could be dried and powdered so that have people could reconstitute it with water or liquid of choice, that would remove the need for the preservative and let people customize the moisture content. The current iteration of the mash is goopy, and we can do nothing to remove the sourness of it. It's much more bothersome and time-consuming to have to let an overly moist food cook down versus just being able to add moisture as you go. Obviously this isn't a potato and may not work the same when desiccated, but I hope this option is something you are willing to explore. Especially if it could lead to a more affordable bulk product among your lineup. Sign me up to try this if you ever release such a thing.

The best taste and low calorie especially if you are counting calories. I buy all of the pastas.

Great idea, do not like taste.
I wanted to try these low carb items. They cooked up well, but could not have any plain sauce as they tasted weird to me.oh well. They will work with more seasonings, but I will pass.

Just eat hearts of palm
I have tried almost every kind of meal replacement, low carb version of something or another and I would never order this again. This is not a replacement for pasta to be low carb. It’s just shredded hearts of palm and it tastes exactly like hearts of palm no matter what you put on it and it’s crunchy. The only thing I havent tried in the box is the mashed potato substitute and to be honest I’m not looking forward to that either. I can eat almost anything and I love hearts of palm but this is not a tasty alternative to pasta. You could literally chill it in the fridge rinse it and put it on a salad where it would be appreciated. It’s just not a good substitute for pasta.

Love this stuff
I discovered Palmini about a month ago in a store and quickly came to Amazon to try the sampler pack. The rice and pasta options are fantastic—10/10! I could easily eat these every day. I love that they’re essentially “cooked” already, making them super convenient to prepare, with a great texture. I’m thrilled to have found this product.The mashed potatoes, however, were a 0/10 for us; they just didn’t work, and we couldn’t eat them as they were. I looked online and saw that some people use the mashed version as a dip or even make flatbread with it. I might give it another try in one of those ways to see if it’s better. But the rice and pasta? Can’t say enough good things!
