Just what I needed
This book is a great reference for those of us who are just getting started in making Bean-to-Bar chocolate at home. It's nice to have that quick reference when I'm moving from step to step and this book saves my phone the drama of smeared fingerprints from messy hands.Visually appealing and put together very well. It's something my children and I can look at together (and we have several times).This book is a must for people who are interested in the Bean-to-Bar concept. It does have a few recipes but the main focus is on the origin and process of cacao.

Gorgeous book with some fascinating information
What an absolutely gorgeous book! It's got gold metallic accents on the cover and the pages themselves are also edged in gold. It's so beautiful that it's the perfect gift book, or a book for the coffee table. Plus, can I also add that every time I've picked it up, my mouth would start watering from all the delicious photos of yummy chocolate?The book is really informative...I love the "Understand", "Choose" and "Create" sections where they explain the entire process from bean to bar. After reading this, I'm truly worried about our world's supply of cocoa. It's difficult to grow and labor intensive yet we use it for both coffee AND chocolate. Can you imagine a world in which those two items become scarce? It would cause world-wide panic I think!Other sections to note: "Explore" highlights each of the countries where cocoa comes from. I skimmed through this part because I just wasn't as interested in how the countries varied from each other. Another section, "Enjoy" gives you recipes so you can make your own delicious confections. Things I noted: The recipes are not simple, which is to be expected. These are gourmet recipes so they do take a lot of work but wind up tasting divine. Also, there's no nutrition information on any of the recipes. Which I'm sure was a smart move because if people saw how many calories they were about to eat, they may not want to make the recipes despite the photos looking delectable.Definitely recommended for any chocolate lover in your life, or for foodies too.

Good book if yoy love good chocolate!
I took a Chocolate Culinary class in college. It was an awesome class and I still have my old handouts from then. This book is basically that class with even more info on origins and production. It's pretty and useful! Great recipes too

Not the book I expected
Based on title and the brief description I expected a detailed text. I was looking for was a book with more detail and depth. This would work as a good introductory high school level book.

Pretty much everything you ever needed to know about this confectionary product.
What do you want to know about Chocolate? Do you want to know how it’s made? Where it’s grown? How to make your own from scratch? Maybe you want to know what the different is between Milk Chocolate, White Chocolate, and Dark Chocolate? Whatever questions you might have about Chocolate, chances are that this book will provide most of the answers!Chocolate goes into great detail about one of the world’s favorite confections. Starting with a historical survey of how it came to be, the book then goes on to describe each step in the process by which pods grow and get turned into Chocolate. The book also has sections on where Chocolate beans are grown, analyzes the typical flavor characteristics of each growing location. It then describes the world of single source chocolates, and tell you how to make your own. Whether you start from raw beans, or any step along the way, the whole journey is laid out in front of you with simple tools and techniques. Finally, there is a section that contains 20 recipes in which chocolate is the main ingredient – and not all of those are desserts!The book is beautifully produced. From the gold leaf paint on the edge of each page, to the drawings, illustrations, and photos that accompany each page, this is one gorgeous book. Even if you do not intend to make your own chocolate, or become a chocolatier, or even become more of a chocoholic, this is the kind of book that many people will put on display because of how nice it is to look through.If there is anything that I was be disappointed in, it is the section on where Cocoa beans are grown. While telling us each country that grows it and some statistics about the country, this section seemed almost like padding. I was also disappointed to not find a section on sources where one could go and purchase some of the items discussed in the text. Not sure why that is.I decided to review this book because I am interested in how various things are created from their basic ingredients. Whether that is Cheese, Beer, or Chocolate, I want to know what it takes to make them. This book certainly answered my questions. While I doubt that I will ever purchase roasted beans to make my own bars at home, I feel that I learned a lot from reading this book and have a slightly better appreciation for Chocolate. I do know that I have already spent some time in the Chocolate aisle at my local supermarket with a more critical eye looking at the various bars being offered for sale and trying to identify which region that bar came from. By the way, I was not successful because all the bars offered in my local supermarket come from very large industrial chocolate companies. Maybe that means that I actually did learn something already, eh?Do I recommend this book? Absolutely! If you are like me and like to know how things work and are made, then this book tells you what you need to know. If you are considering making your own chocolate from scratch, this book gets you started in the right direction. Even if you only want to be a better consumer, this book will help. So, I do recommend it to those who have those inclinations. I did not have the time to make any of the recipes listed in the book, so I cannot speak to their quality.

This was the one I was looking for
After purchasing a few books on the Bean to Bar subject this was the book that gave me the most help to understand the product and the process. The explanations are easy to understand. I have now made my first lot of chocolate which is waiting to be tempered. This is a great book for people like me who would like to make chocolate and want to do it properly but have no idea about how to start.
