Can you buy another grill grate? Take off the griddle and have a full size grill.

I contacted Royal gourmet to get extra cooking grates, 2 more flametamers, and an extra wind deflector. Here is the response. Dear Valued Customer, We apologize for inconvenience but we do not sell parts rather than replace them under 1 year warranty. However, flame tamers and cooking grates are not brand specific and can be found on Amazon or at any hardware store by measurements. Please give more details if a wind deflector is damages and provide pictures, if possible. Also, please provide your order number. So the answer is No without going to universal replacement parts by another manufacturer.

How well does the grill side stay hot with there being no lid? Does the griddle side get Pretty hot?

The grill side takes a few minutes to get hot, even in high. But once it's hot it cooks fairly quickly. A stock pot cover to cover the food helps cook faster.

Can you buy a lid for the grill side?

I plan to leave the sides and bottom off and use as a built-in grill/griddle in my outdoor kitchen. Any reason not to do that?

Everyone seems to be doing this, and I want to too, but at least consider that the manufacturers wont talk to you anymore and you void your warranty because it's no a possible fire hazard. Before you had ventilation from all the sides and the bottom and now you're encapsulating your 400 degree burners into a box of concrete backerboard? tile? wood?? You can probably do this, but it's not OBVIOUSLY safe.
