great for turkey spatchcock
got these awhile ago for use when smoking/bbq'ing. they've sat for a few years as i've not needed them. used them last night finally and spatchcocked 2 butterball 20lb. turkeys - worked great - even while wearing gloves and hands covered with slippery turkey juice and water. spring action makes 1 handed operation optimal. easy to clean. latch on handle keeps them safely closed and secure when not in use. glad i got these and had them in my arsenal!!

I use these in a commercial kitchen. Solid, well made, sharp and durable. Excellent value. Not really suited for people with small hands or low grip strength, but perfect for my requirements.

Cuts right through chicken bones! When splitting a chicken frog style or spatchcock.. these work great. Also do well when splitting chicken wings into different sections. Very sturdy feel to them. Heavy duty! Glad I purchased them!!!
