Very Pleased With Improvements
***UPDATE***True to the seller's word they replaced it with their improved version. I love it. You can lock in depth. Also, everything was level and the blade was sharp. They fixed the two issues I had and I really appreciate the amazing customer service!***Old Review***The only reason I didn't go 1 star is because I liked the stainless design.I have rarely written a bad review but I felt like this product really let me down. As you slice, whatever it is you're slicing, the adjustable guide into the blade is not level so I was slicing wedges. I was able to bend it closer to right...but it isn't right. There is a knob that allows you to set the depth. This adjustment does not lock in. The problem is that you are putting some downward force as you you slide your veggies into the blade and over a dozen slices I would have to stop and reset the depth. Also, because it doesn't lock to a depth it is harder to stay consistent. The way the back leg is mounted makes it not great if you like slicing on top of a bowl.Lastly, the backside of the blade it is raised just enough that veggies can catch a little as you slide back and forth. If you use these a lot you know that's where you can end up with the little errors that result in cuts or flying food.I tried to use this and adjust to it and I couldn't. I needed to slice 50lbs of taro very thinly and gave up. I went to 24hr WalMart and bought a cheap one that got me through my project. I am still looking for a good mandoline in this price range.

"They are right! I absolutely Love it!" A New thicker very sharp blade and a new locking slice thickness adjustment knob.
Let me start by saying that this is a one of a kind perfect slicer that I have looked many years for. Finally a Mandoline Slicer with a sturdy stainless steel frame. Not flimsy plastic. There is one blade and a knob with 2 julienne settings and multiple slice thickness settings which lock into position. Cut paper thin slices all the way up to about 1/4" slices. Great for slicing vegetables for all your salads or sandwich needs. If you are looking to make potato chips or french fries then this is the perfect utensil for you. Slice Zucchini noodles for the healthy versions of your favorite pasta dishes.Clean up is a breeze. There is a clip on blade protection strip for storage when not in use. My meal preparation times have been drastically reduced with this awesome kitchen addition. When slicing the vegetable thickness consistency is perfect which makes meals look very appealing. You'll will impress friends and family with this new tool in your kitchen arsenal. This Mandoline Slicer has an extremely razor sharp blade. Very little effort is needed to slice your favorite vegetables. On that same note..... Please use caution when using the Mandoline Slicer. Use the provided vegetable holder for your protection. Not recommended for children. The price is a true bargain for such a superior Mandoline Slicer. Competitors are selling slicers for double and triple the cost of this slicer. Most of the competition is made with flimsy cheap plastic and so many pieces to do the same thing this one piece slicer will do much better.I received my Mandoline Slicer just one day after ordering. ((WOW)) Amazon Prime...it really pays to be a member. Excellent service from everyone involved with this purchase.I owned the previous version of this Mandoline Slicer. It was okay, but the quality of the cutting edge was lacking. There was no good way to protect the cutting edge while in storage. I also noted that the blade thickness adjustment knob did not lock. The food holder which protects your hands had runners which were awkward and could contact the blade which would damage the blade and the holder. These problems have been fixed and I might add that the customer support is unmatched. I received answers within a few hours at most when contacting customer support via email. They were not kidding when they said they will do what it takes to sell you the perfect Mandoline Slicer."You will Absolutely Love it!" I know I do!Thanks (Joyful Cook)! You hit a Home Run with this one.

An Untalented, Disfigured and VERY Clumsy "Chef's" Review
This is NOT an expert review from a master chef. My knowledge of cooking and preparing food is quite rudimentary. That being said, this device is quite basic so just about anybody can use it effectively. It comes packaged with a simple two-page, double-sided, laminated, diagram-color booklet/manual, featuring illustrated pictographs of how to "operate" it. This unit is NOT electrical, so there is no wire. It is constructed of "stainless" (I presume that basically it's not supposed to rust?) steel and hard plastic. It's really cool looking. I wanted this product simply for the sole purpose of cutting tomatoes and onions into perfectly symmetrical horizontal slices. So far when I utilize this device, the vegetables instead come out with this spiral slice effect, much like unraveling a yarn ball. I should also mention that I have wide "web-skin" hands with long, slender fingers, and am severely clumsy as well. It is quite easy to use however, and I predict that the more I use it, the more symmetrical and picturesque the slices will be. Also as of writing this review, I've had it for about ten days, and ONLY used it twice. I haven't tried "Julienne" cutting any produce and doubt that I ever will. Be wary though that the rotating blades to be applied for aforementioned cutting technique are VERY sharp. Near the tip of my index finger parallel to my thumb on my left hand was cut and bleeding but I didn't notice it initially when it first happened. Handle with care, the slightest touch can leave a cut. When cleaning/drying/polishing the device with a towel, make sure that a straight up & down motion is applied to the surface of the "Mandolin" cut blades, or pieces of the paper towel will get snagged, at which point in time they will need to be removed with tweezers. Wear gloves when wipe-drying as the steel surfaces do smudge from finger-oils. The design is sleek, and if you're a similar person to myself, you'll be glad that the steel runway is shiny but not reflective, so you don't have to cry when you see your own "face". However, please wear goggles when slicing onions, or you WILL cry SO MUCH that you'll wish you didn't even have any eyes to began with.
