My Favorite
I prefer to grind my own wheat. It just tastes better to me. I have been using this brand for a couple of years now and have been very happy with it. Mostly I bake it into sourdough with a little RealSalt and it is delicious. However, I also like to make a kind of naan from it or fried bread sometimes. Typically I cook a loaf of sourdough using my own "domesticated" starter once per week. The taste beats anything that you can find in a supermarket. I think that the key is to come up with the right rhythm to fit bread baking into your life. I have very little time, so I just mix it up at night (I am way too lazy to knead it), put it in a large pot and let it rise overnight (7-9 hours). All I have to do in the morning is turn on the oven when I wake up, and in an hour I have fresh bread for the week. It could not be easier. I know that this is not technically correct way of making bread, but I couldn't care less since the taste and texture are perfect for my taste.

Surprisingly Positive New Discovery for Me
The 25 lb woven polypropylene bag of wheat was shipped to me via USPS in a large flat-rate box. I never imagined such a large sack of grain would have fit, but I saw it with my own eyes. Since I was a teenager I have ground wheat and made bread, but never have I tried Hard White Wheat before; I had used the Hard Red Winter Wheat all these decades. Since this Hard White Wheat has slightly less protein (Gluten), I decided to grind it 50/50 with some Hard Red Wheat to find out how it would perform. I've made two 2-pound loaves now and I'm well pleased; they ended up a little lighter in color and had a desirable soft texture. One loaf I baked as a pan bread and the other as a free-form batard loaf. I ground the flour as fine as my stone burr mill will accommodate.What was best of all is that I discovered that this wheat grinds to a flour that better approximates all-purpose flour than my old stand-by red wheat ever did. It still has the germ and bran, but comes as close to performing like all-purpose flour that a Whole Wheat could possibly do. It's just great for muffins, biscuits, pancakes, and cornbread. Finally, I discovered it mixes well with durum and semolina to make fantastic pasta dough for linguine, fettuccine and wide egg noodles. I have not yet tried it for cakes, pastries or cookies, but when I do I'll update to let you know how it performed. My next venture is to try it for making pop-overs; that will be very telling for me, how it might perform for things that are meant to rise very light and high.

Clean and nice!
Just milling my first batch now. The packaging is fine, and the berries clean and nice. I can certainly see the difference between this white and the red wheat berries I've already used! Will post later about how the "white" bread turns out. I'm trying to fake my family into liking whole wheat as much as "non-nutritional white". The hard red I've used was great but undeniably "whole wheat". We'll see if this white is closer to what is sometimes in stores as "white whole wheat". Wish me luck!

My wife and I decided about a year ago to start milling our own flour for freshness, taste, and health. Flour that isn't used quickly loses some of its nutritional value... which means that what you buy in the store isn't as good for you as it could be. These wheat berries came quickly and were packaged perfectly. There were no tears, lose berries, etc. We quickly stored them in a food grade container and keep them in the laundry room where it's dark and cool.We like to mix these with hard red winter berries for our loafs of bread and are still experimenting with the %s of each. I will say that these berries make the hard red berries not as wheaty and add a great dose of flavor. These berries have also been used alone (no red winter berries) to make bread and they taste delicious. My wife also uses these to make granola bars from scratch and they are simply awesome when used for that.Some additional information that could affect your decision would be the company that grows these berries... seems very top-notch! I've received email correspondence with them and you can watch videos of them processing the wheat, get tips on cooking and storage, and more. The company seems to take a lot of pride in their product which is always a plus!I highly recommend these wheat berries for your family as we will continue to use them for mine. Excellent product, would give more stars if I could!
