Perfect texture
I have tried several varieties of rice for risotto, and this is the best of them all. The rice is a little pricey, but the package is convenient and will last several meals. I found it easy to cook the grains perfectly: no hard/dry middles, a touch of toothiness, cloaked in creamy sauce (I only used wine and broth so the "cream" came from the rice).This is on my list of quality ingredients to maintain in the pantry.

Excellent rice!
Vialone nano is my favorite risotto rice - I like it even better than carnaroli, and this brand is of superb quality. It cooks up with such a creamy texture, you can understand why some people have the heretical idea that cream is added to finish a risotto.My last few risottos have been a bit disappointing due to poor quality rice, and I was starting to think I had lost my touch! The Melotti rice restored my faith.

Tasty option for paella
I use this rice for paella and it's pretty fabulous. Holds it shape and substance from stove top to wood fired grill for finishing then a rest before eating. Great vehicle for all the flavors of the broth, seafood, and smoke from the grill.

Great risotto rice
You haven't had risotto 'til you've made it with this rice. The rice stays distinctive and doesn't turn to mush like arborio rice does. The flavors are more rice-like than starch-like, too. I highly recommend this rice for risotto.

A joy to cook with!
This risotto is different than your average risotto. It has a nice nutty, buttery flavor. It getsNice and creamy without falling apart, retaining the feeling of being al dente. Worth the money. I would definitely purchase this again. It's like the risottos I had while in Tuscany and Umbria.
