August Zang and the French Croissant (2nd edition): How Viennoiserie Came to France

Anyone seeking the history of the croissant, the baguette, and other breads, thought to be French will have much to learn here.

I hate to have to give this book a bad review because of a Kindle failure, but I didn't see another view with the same complaint, and I want to alert other readers to BUY THE PAPERBACK. As previously reported in 2018 (and it is now four years later and not fixed), the Kindle version is corrupted, and there is no content after the 8% mark. From what I have read, Chevalier is an excellent food historian and is doing a great service to break the various myths about how to croissant came to Paris from Vienna. He deserves better. And as the book is self-published, I think he may be the one in charge of fixing the problem.

Bought this for a project I'm doing that requires the history of croissants.... had to download the kindle app onto my laptop since it wouldnt open with the google chrome extention.

Je suis satisfait de cet ouvrage.Livre précis, concis et bien documenté qui dépoussière les mythes.Il apporte beaucoup à la compréhension d'une époque : comment la révolution de la boulangerie au XIXème siècle a fait la baguette et le croissant d'aujourd'hui.J'en recommande la lecture et son achat.

Disons-le tout de suite, ce n'est pas Fernand Braudel, mais Jim Chevalier a l'immense mérite de présenter une biographie vraie d'un gâteau d'habitude entouré de mythe (Marie-Antoinette, les Turcs, etc).Avant tout, le livre est fantastiquement bien recherché et documenté. On sent un travail important et patient.Ce petit livre a bien sûr des défauts (Jim Chevalier écrit comme un pied, à tel point que l'on se perd parfois un peu), plus ennuyeux, on aurait aimé une présentation plus poussée des petits pains parisiens précurseurs du croissants don Jim Chevalier est aussi un spécialiste.Mais l'un dans l'autre un excellent petit ouvrage par un amateur éclairé.
