Keiyo Kosan BKT76002 Katsu Box, Medium, Spruce, Japan

Okay, I was a bit worried because of the mixed reviews on this one, but kezurikis are expensive in the United States and this had a good price on it so I made the purchase. It came in Japanese packaging and has Japanese instructions (Google Translate has a photo mode for text if anyone is wondering). I felt satisfied that this was in fact an authentic kezuriki. The product itself was perfect, no scratches, no gaps in the wood joints. It is made from a light wood (reflects the price) so I suspect those who had issues can trace it back to humidity/heat rather than the woodworking. I haven't shaved bonito just yet, but after inspecting/touching the chisel blade, I don't think there will be any issues here. I'll leave this at 5 stars and will come back and update this review if I hit any issues.

This seems to work pretty well. I was able to make 60 grams of flakes fairly quickly. I used a truncheon-shaped wooden tamper for adjustment. Remove the blade section for adjustment, not the box. That’s not very well made, and in fact I had to glue one edge of the box on arrival. If I do this long term, I’ll likely buy a better kezuriki, but for now, and for my level of skill, I think this will do.

The blade actually sits BELOW the wood surface so it doesn't shave AT ALL. Got it in December and it sat on a shelf until today. Kicking myself HARD for not testing it and just assuming it would do the basic function for which I bought it.

I bet you could spend hundreds on one of these things. I wasn’t looking for a work of art, just something that works. This fills the bill. I‘be been using it regularly for a year now and it’s been well worth the price of admission. One important thing here: I have a woodworking bench with a big side vise I can clamp it in to hold it nice and stable. Really streamlines the whole process. Otherwise, let’s dashi!

I received a replacement and have changed my review to 3 stars instead of 1. It is not as uneven and the blade has not been ground down on one side to fit. It works fairly well. The quality of construction is adequate but not that great. I will not be returning the replacement as it does its job. *my original review* I am an experienced professional executive chef. I also lived in japan for 2 years. The product I received is not worth purchasing. The slot that holds the blade is not centered and one side has a deeper cut creating more surface area. You can see the poor craftmanship in my photos. The uneven sides cause the blade to stick on one side when adjusting so that the blade becomes stuck and crooked while hammering. I am returning the one I received for another. If the one I get the second time is better constructed I will adjust my review. If not I will ask for a refund.

Great product for the price. The only reason I did not give it 5 star is that the box compartment sticks when pushing it in and out but fixed it with a little sandpaper.

I received it before the expected arrival, packaged safely. I've used it already and love it. I've become a big fan of miso soup but didn't really like the dried bonito flakes as a topping, I just used them to make the broth. This makes all the difference, the shavings are meaty and delicious. They have a true smokey flavor that I love. What an improvement to my miso soup!!!! I really like how everything is in the box, cover for the blade and drawer for the shavings. It's a nice looking box, easy to use and ya shipping was longer than others but I would purchase from this seller again if I were to buy one again.
