15 percent protein, an almost absurd level of fiber, plus iron, calcium, and potassium. The dark-purple seed coat is also high in the antioxidants known as anthocyanins—apparently higher than cultivated blueberries. What's not to love? I use this for my sourdough bread making. I sprout them and then mill them and use about a third of the total flour content for the recipe. I use it with einkorn flour and it is lovely. The bread takes on a darker color, but not purple. It has a very good flavor and you can't beat the nutrition.

Very yummy and great source of fiber
Have to cook more than pearled barley but with the hull nuttier taste and more filling. Full of fiber. Great in soups
