Fior di Sale, literally "flower of salt" is the finest result of natural sea salt production. It consists of the crystals that form and accumulate at the surface of the salt beds where the humidity and breezes are right (it does not happen year round, this is also why it is so precious and more expensive). This upper layer is gently raked off the surface manually. It is a natural salt rich in iodine, fluorine, magnesium and potassium with a much lower percentage of sodium chloride than regular table salt. Taste Profile: Delicate, naturally sweet. This salt is produced in a natural reserve that aims at preserving the long tradition of salt extraction as well as the natural environment and biodiversity that goes with it.
