Su-Casu is a specialty thermophilic starter blend for semi-hard to hard cheeses in the Southern Italian style. This culture is officially approved in Italy for legal production of Pecorino Sardo DOP. It is also perfect for other types of Pecorino and cheeses of all milk types. Makes great Parmesan, Romano, Grana, Pantaleo, Toma -to name a few. This culture has very high heat resistance. Composition: Streptococcus thermophilus, Lactobacillus delbrueckii subsp. lactis, Lactobacillus helveticus.
