A keeper!
Bought because our non-stick pans are definitely sticking after 10 years. This pan is great, especially for eggs! I take care to hand wash after each use. Still in great condition after 2 years!

I L-O-V-E these pans!
I'm normally a cast iron guy as much as I can be, but I needed a new nonstick for eggs and such. These pans have exceeded my expectations in every way, they're even more non stick than my old Teflon pans and far better at cooking. I'm really surprised at how much I use them for meat compared to my cast irons too, while they won't replace cast iron for proper sears they do a helluva job for what they are in a pinch. Cleanup is extremely easy because they're so nonstick, and they heat up way faster than my old Teflon pans too. The only thing I could possibly dock them for is the handle base getting very hot and for some reason being very tempting to touch when moving, but I'm already adjusting and it will be no problem to get fully used to soon. Seriously a great product at a great price.

First impressions, first use
LID COMPATIBILITY: I always worry that the lid I have will work with a new pan. The top inner diameter of this pan is exactly 11". My lid lip diameter is 1/32-1/16" under 11" diameter and has a lip depth of 0.287" (about 9/32"). My lid fit exactly. I can't even detect wiggle but nothing is forced and they don't stick together.SPECS: The specs say this pan weights 2.29 lb but the pan weights 2.13 lbs. Small difference of 2.5 oz but I was comparing to another pan. The specs say the handle is ceramic. It is plastic.FIRST IMPRESSIONS, FIRST USE (DAY 1, 12/29/24): This pan reacts pretty quickly to burner temp compared to the pan I am replacing (after 8 yrs... the TeChef Blooming Flower Platinum Teflon). That pan is induction compatible and had a pretty chunky base with steel in it.I cooked/browned breakfast sausage at low/medium heat and then added butter, flour, cream & milk, rosemary, thyme, red pepper flakes, & black pepper to make sausage gravy for biscuits and gravy. Plastic and silicon utensils only.I'm probably just used to my old pan but it was almost too slippery. I had a little trouble tipping the pan to mop the fat out without the sausage sliding with it. No complaint. When I went to pour the gravy into a storage container, it all just came. Not one speck of gravy was left in the pan. That's awesome. The only think left was some fats/oils that cleaned up in like 5 seconds. No residue was left in the pan.The base did discolor on first use (natural gas burner) over may the 30-45 minutes of use. I don't really care but somebody that has their pans more visibly stored might.Not having a riveted handle is great. I don't know why anyone buying a pan would want rivets into the inside working surface of a pan. They are unnecessary...welding works. That is a big reason why I bought this pan.There is metal between the plastic handle and the pan. It gets too hot to touch. I didn't really get burned but it will immediately tell you to did it wrong. I'm going to have to retrain myself because I could put my thumb right up to the edge of the pan on my last pan.

Best Omelette frying pan
I bought this pan because of the ceramic non-stick coating and I chose this one in particular because there are no bolt or screw heads protruding inside the pan. The cooking surface is completely unobstructed and therefore easier to clean thoroughly. Also, there are no screw or bolt heads on the outside of the pan. I can't tell how the handle is attached, but it looks like it is welded on and there are no mechanical fasteners that could loosen up as has happened on some past frying pans I've had. This pan has "Magneto" technology and is claimed to be suitable for induction cooking surfaces, but I have an old fashioned electric stove with spiral heating elements, and it works fine on that.I replaced an older ceramic non-stick frying pan that was finally losing its non-stick quality after several years of good service. This GreenPan 8" non-stick pan has the newest "improved" non-stick surface from GreenPan, and it certainly works better than anything I have tried before. I mainly use it to make omelettes for breakfast, almost every day. I typically add a small amount of Ghee butter (a bit of oil is recommended), then add veggies and let them fry a bit before adding the eggs. The omelette always flips and slides out of the pan easily with a semi-soft spatula I use. The pan I replaced was more expensive, but this one is better. I highly recommend it.

These pans will BURN you!
I really think the pan part of the skillet itself, is wonderful. Sadly, the Y joint that connects the handle to the skillet gets just as hot as the skillet, so the cook can very easily get burnt when grabbing the handle. People who aren’t familiar with the pan, who might be cooking with it in your kitchen, often get burnt. The handle is a burn risk. Period.

Not very non stick. Burn potential.
Frankly disappointed with the "non-stick" when cooking eggs (my main purpose for buying this pan) . The transition on the handle to metal needs more definition or a guard, I have burned my finger when grasping the handle. I've noted this mentioned in other reviews also.

They Do What They Say
First the confusing part: The instruction book that comes with these pans seems to disagree with the advertised statements.The good news, for the two months I've had them the pans seem to agree with the listing, not the instruction book.For example, they ARE metal utensil safe.The instruction book recommends not using stovetop temperatures higher than medium. That doesn't work for me. But the pans have held up fine at medium-high. No warping or anything.The instruction book recommends storing the pans with pan protectors to avoid chipping the edges. I tried my hardest, but occasionally they got stored wrong and they did chip. I guess now they have character.I'm pretty happy with them.
