New Mexico Red Chilli - CHILLIESontheWEB (200g)

When I ordered these chillies, these were entirely new to me. I usually use fresh chillies for cooking, but the recipes required dried chillies. When the package arrived, I was struck by both the size of the chillies and the colour. The chillies measured over six inches in length and the colour ranged from a rich red maroon to almost black. When I opened the bag, the aroma hit me, it was amazing! For one recipe I had to 'toast' the chillies before covering them with boiling water - the resulting 'stock' was so full of aroma that I now reserve it to add as the water to a beef stock, greatly enhancing the depth of flavour of a beef chilli. These chillies look smoky, smell smoky and certainly add a smoky note to any recipe. As another reviewer noted, they are a mild chilli - that is the variety of chilli, this group of chillies is mild. I have used the chillies in Enchilada sauce, beef chilli and Salsa Roja thus far. The packet contains a generous number of chillies, easily 50+ at a guess. I took a while to write the review as I didn't use them straight away. I am seriously impressed with these chillies, a chilli brand that I randomly picked on this site - Try them, you will love them. Highly recommend!
